Luscious Lemon Bars

Ingredients
Crust
- 1/4 Cup Granulated Sugar
- 3 Tablespoons Butter, softened
- 1 Cup All-Purpose Flour
Topping
- 3 Large Eggs
- 3/4 Cup Granulated Sugar
- 1/3 Cup Lemon Juice
- 3 Tablespoons All-Purpose Flour
- 1/2 Teaspoon Baking Powder
- 1/8 Teaspoon Salt
- 2 Teaspoons Powdered Sugar
Directions:
- Preheat oven to 350°
- Grease 8 inch square baking pan
- For crust, beat 1/4 Cup granulated sugar and butter with a mixer until creamy. Gradually add 1 Cup of flour to the mixture, beating on low speed until mixture becomes crumbly. Press into bottom of square baking pan. Bake at 350° for 15 minutes.
- While the crust is cooking, prepare topping. Beat eggs with a mixer at medium speed until foamy. Add granulated sugar, lemon juice, flour, baking powder and salt, and beat until blended. Pour over crust and bake at 350° for 20 minutes.
- Cool on wire rack. Sift powdered sugar over top.
